Protein Muffins

I’ve always wanted to work out in the mornings before work, but I love my sleep so much that I’ve felt like I could never do it. Since I’ve started doing this new boot camp, I’ve been trying the 6:30am class, and surprisingly, I’m finding that it is doable!  I try to make sure I am asleep by 10:30pm and my alarm goes off at 5:55am and out of bed by 6:05. Oh, and I lay my workout clothes out the night before so in the morning I don’t have to think about anything. Brush my teeth and hair, splash some cold water on my face, contacts in, clothes on, and I am ready.

But I need to EAT. I wake up basically starving so there is no way I could do workout with food. And you shouldn’t. You need to have something on your stomach before doing a workout. I was making oatmeal, but it was taking too much time and effort when I could have been sleeping more. That’s where these muffins came about! I wanted something that I could grab and eat in the car on the way to the gym, and these are definitely it. I eat   a muffin, drink water, and turn up the music on my 8 minute drive and that is just enough to wake me up and get excited about my workout.

  • 6 Ripe Bananas
  • 2 cups oats
  • 3 scoops chocolate protein powder
  • 5 tablespoons almond or peanut butter

Mix it all together in a large mixing bowl and spoon into a muffin tin sprayed with coconut oil. Heat on 350 for 15-20 minutes. Makes about a dozen large muffins.
